Heritage Harvest Recipe from Potatoe & Apple

Fidget pie is a popular recipe developed many years ago in Britain. It was nearly as popular as the British tea biscuits and scones, and it's still made today.

A great meal for the Autumn, fidget pie uses the harvest of the potatoes and the apples. The pie has a thin broth with a great taste.

Fidget Pie Ingredients

  • 1 lb (450 g) potatoes, peeled and sliced
  • Approx. 8 oz (225 g) cooked bacon or ham, diced
  • 1 lb (450 g) apples, peeled cored and sliced
  • Sugar (optional)
  • 1 1/4 cup chicken stock
  • Salt & pepper, to taste
  • 4 chopped fresh sage leaves, or 1/2 tsp. dried sage
  • 1/2 tsp. ground nutmeg
  • 1 medium onion
  • Approx. 4 oz (100 g) shortcrust pastry, pastry for single 9 in. pie crust

Method:

1. Make a layer of potato slices in a pie dish, then cover with bacon or ham.

2. If the apples are sour, dip the slices in sugar and make a layer on top of the bacon or ham.

3. Continue layering until all the ingredients are used and the dish is full.

4. Add salt and pepper.

5. Roll out the dough and use to cover the dish.

6. Bake in a preheated oven at 190°C (375°F) for about 1 hour or until the pastry is golden brown. Serves 4 - 6.
